Each lamb has a different character, which you can discover as you feed and pet them in their enclosure by the patio area..

New speciality lamb: The Guard of Honour @ £12.50 per kilo.
The two best ends of lamb that are chined, the rib bones bared and they are leant against one another with the rib bones interlocking and the void between them filled with an apple, onion and breadcrumb stuffing, ready to be roasted.
Rack of muntjac venison. £28 per kilo; typically between £6 and £10 for two people.Season with salt and pepper and sear in a pan for 2 minutes a side before placing in a hot oven for 6 to 8 minutes. I like to use a mixture of olive oil and unsalted butter with fresh thyme and finely garlic chopped. Serve with kale or purple sprouting broccoli and a mash of seasonal root vegetables.
